After some teaser content yesterday, Rowdy was hard at work editing more TOP FLR video last night.
Wine: 2007 Domaine Des Cassagnoles Côte de Gascogne (Gros Manseng variety)
Food: Crispy Green Tomatoes, Arugula, and Crab Remoulade.

Adam admitted that he put a lot of thought into this pairing. Putting in a Gros Manseng is evidence.
What we really dug about this-- Take the dishes main elements- Fried tomatoes, crab, and some mayo. It doesn't really sound like light eating does it? But when this dish was paired with this wine, which was lively, bright, and acidic- the dish actually felt light. A heavier wine, one that had gone through malolactic fermentation, and that was ultra-extracted, would totally weigh this dish down. Another element that made this work- the ARUGULA. This particular wine has a wee bit of jalapeno, and the pepper on the arugula highlights that note. If you try this pair, put some arugula on each bite.
TOP FLR may no longer be a secret, but if you want to put your trust in people who are passionate about wine and food, this is a great spot. Without their guidance, there are things on their list that you might never discover.

Along with great wine and food, TOP FLR attracts an interesting crowd. On our way out the door, we began chatting with another patron and learned he was traveling across the country in a combo bio-diesel/ solar bus, documenting American treasures that may be lost in our lifetime. Pretty cool stuff.
