Ahhh... Woodfire Grill.Change is good. But if all is ever-changing, is change really change?Our stop at Woodfire Grill for the Riding Dirty Wine Pairing Challenge was a special one. All of the Chef's we've met along this challenge have cooked with heart and soul. But, I don't know if anyone was able to verbally articulate their passion like Chef Kevin Gillespie. He operates on a higher plane than most of us...
Woodfire Grill Riding Dirty EntryWine:Simonsig Chenin Blanc(South Africa, Stellenbosch)Food:Pan Roasted Diver Scallops, braised leeks and fennel, Bouillabaisse sauce, herb saladFirst, something needs to be said about this dish... It was clean, delicious, and without flaw. It was one to make us stop and utter a few words of profanity in disbelief. Uncluttered, uncomplicated, delicious and pure. The S. African Chenin Blanc that Nick Quinones picked, paired really well- Bright and focused on the nose (with almost a whiff of Sauvignon Blanc), full bodied, but not monstrous, acidic, and balanced. This cut its way through the sweet, tender scallop like a jigsaw fitted with a razor blade... Bringing out the fresh sweetness of the scallop without overpowering. The touch of Bouillabaise, brought out almost a spice and herbal quality in the juice, and the fennel and leeks provided grounding and balance.This was good. Very good. For those that love clean food- Highly Recommended.
